Mixed Berry and Basil Gazpacho with AOVE tears

Ingredients

Tomato
Basil
Breadcrumb
Mixed Berries (Strawberries,
Raspberries, Blackberries,
Blueberries)
Raspberry Vinegar
Olive oil
Salt
Parmesan Cheese

Method

  1.  Macerate the breadcrumbs together with the peeled tomato, salt, oil and raspberry vinegar.
  2.  Grind all the ingredients in a food processor or similar, adding the berries and a few basil leaves.
  3.  Continue grinding while adding a little olive oil in order to achieve a light emulsion.
  4.  Serve in bowl or even a Martini glass.
  5. Sprinkle with grated Parmesan and finish with a few drops (tears) of olive oil and some fresh basil leaves.
