1 kg. Jhon Dory
2 g garlic
15 g Tomato jelly
1 brick pastry sheet
Samphire gel
Samphire

Method
- Cut the Jhon Dory loins into thick strips.
- Cut the brick into 4 triangles.
- Take a piece of Jhon Dory and wrap the whole piece with the brick pastry, holding it. Fry in oil until the pastry is browned.
- To prepare this chilled soup (garlic, samphire and chopped almond), mix all the ingredients and grind. Emulsify with sunflower oil and season.
- For the samphire gel, reduce the samphire juice, add sugar and sone gelatin, cool and grind.
- Serve with chilled garlic soup and tomato jam, the Jhon Dory wrapped in the fried brick pastry and decorate with samphire and samphire gel.
